The red wines, Zeigelt, Cabernet Sauvignon, Merlot and Spätburgunder are fermented traditionally in open tanks and, following a biological malolactic fermentation, are stored for either 1 to 3 years in large wooden casks or for 1 to 2 years in barrels made from native or French oak.
