On top of its teaching activities the institute has carried out extensive research work in all areas of wine-growing and wine technology since its establishment. For Chardonnay and red wines biological malolactic fermentation is carried out and ageing takes place in barrels. Some of the red wines are ripened however in large wooden casks for 1 to 2 years before being bottled.
